Over the past few weeks the grocery stores have run sales on in-season berries. I love using them when they are fresh and used to wish I had them during the winter months. I’ve tried freezing them before by washing, placing them in bags and freezing. They were ok but usually mushy when thawed. Then I found the correct way to freeze berries so I can enjoy them year-round.
Gently wash your fresh berries (all but blueberries). Pat them dry. Arrange them in a single layer on a baking sheet and freeze until firm. After they’re completely frozen, transfer them to freezer-weight resealable plastic bags and store up to 9 months.
When freezing blueberries, don’t wash them before freezing. This will toughen their skins. Wash your blueberries after they’ve thawed.
